FOOD COMMITTEE MEETING

Attendees: Justine Thomas, Chris Dukich, Don Williams, Andrew Bond,
Rachel Boberg, Joe Browne, and Tom Rizzo

Date: 2/11/08

Location: Hawks Nest

Next Meeting: February 25, 2008 at 12:00 pm.

New Business
• Milk was increased at Mandeville cart
• Wheat pasta is on the menu cycle, and will be increased.
• Lenten Specials – A sign will be posted listing all items available
to those wishing to abstain from eating meat.
• Good comments from the buffet style brunch.
• Overall dinner has improved.
• Reviewed upgrades on Residential dinner.
• Good comments received on the meatball subs for dinner.
• The committee felt the employee attitude has improved.
• New omelet pans will be purchased to replace the current pans.
• Color coded chart discussed for use on entrée options. Area’s of
vegetarian, vegan, low fat, low sugar, and whole wheat options.

 

Old Business
• Letter from student with celiac disease presented… she was emailed to
contact Tom for meeting with him as well as nutritionist.
• A request was made to have additional spices available at Ancho Grill
• Employees will be reminded to change gloves often
• A request to color coordinate vegan, heart healthy, and potential
allergy options. We are looking into our corporate programs.
• We will attempt to warm bagels prior to making bagel sandwiches. We
do not want to place in the oven for fear of drying out the bagels.
• Sausage patties need to be made in smaller batches
• Fresh fruit is welcomed on the salad bar.
• Additional premixed salad on salad bar option is being developed.
• Orange Juice will now be placed on ice in the salad bar.
• Request to rotate Ancho Grill into weekend late night options with
Quiznos, and Hawk Wrap.
• Quiznos Toaster settings need to be calibrated.
• Milk in pitchers at the coffee station in MV.
• Several concerns regarding the Jump station. This concept has been
determined to be tired, and will not be a part of the renovation
project.
• Mandeville has been a big hit. Nice visual improvement as well.
• 1/22—positive comments about dinner; good variety.
• Quick overview of “new campion” discussed, including changes from
previous plans.
