FOOD COMMITTEE MEETING

Attendees: Justine Thomas, Chris Dukich, Elise Baker, Kevin Gainey,
Andrew Bond, Joe Browne, and Michael Lumer

Date: 2/25/08

Location: Hawks Nest

Next Meeting: March 17, 2008 at 12:00 pm.

New Business:
• Elise—campus kitchens. Leftover food going to people in need. Must
refer to “legal” department. Once food leaves campus, Aramark
responsible and liable if anything happens.
• Dinner at “home” station cold sometimes. Looking into deeper dishes
and changing flame more frequently
• White vs. brown rice—couldn’t really see the difference. There is a
slight difference
• Continuing themed dinners like last semester once a month.
Wednesday 2/27—soul food night for Black History Month (big hit!);
March—St. Patrick’s Day theme, green milk shake bar with other desserts
also; looking for ideas for April
• Pizza at dinner is big hit as well—will be on rotation once a month
• Pasta station baked and pre-made (one night made to order was not
available)
• Elise’s friend found beetle in food—can’t really control; also
found hair—will remind workers about hats/hairnets
• Omlete station not at brunch this past weekend—short staffed, will
be back this weekend
• Deli meats and cheese not fresh—will put out 1 lb. at a time to
ensure freshness
• Letter from Angela Cannistraci—not satisfied with food and
conditions. Will be emailed to come to food meeting; double washing of
broccoli now occurs (she found dirt in her broccoli)
• Asked to refer to Aramark as “Dining Services” in Senate Newsletter
• Potential “new cycle menu” for next year to be done for next meeting

Old Business:
• Milk was increased at Mandeville cart
• Wheat pasta is on the menu cycle, and will be increased.
• Lenten Specials – A sign will be posted listing all items available
to those wishing to abstain from eating meat.
• Good comments from the buffet style brunch.
• Overall dinner has improved.
• Reviewed upgrades on Residential dinner.
• Good comments received on the meatball subs for dinner.
• The committee felt the employee attitude has improved.
• New omelet pans will be purchased to replace the current pans.
• Color coded chart discussed for use on entrée options. Area’s of
vegetarian, vegan, low fat, low sugar, and whole wheat options.
